Chocolate cake isn't just any dessert – it's a symbol of comfort, celebration, and pure indulgence! Here is an old favourite I want to share with you.

Ingredients
4 Eggs
200g (1 cup) Caster sugar
210g (1 1/2 cups) Flour
20g (1/4 cup) Cocoa
3 teaspoons Baking powder
Pinch of salt
1/4 cup Strong coffee, cooled down a little
1/4 cup Boiling water, cooled down a little
125ml (1/2 cup) Vegetable oil
1 teaspoon Vanilla extract
Method
Preheat your oven to 180°C, grease two 22cm cake tins, and line them with baking paper.
Add your eggs and sugar to a mixing bowl and whisk till light and fluffy.
Sift your dry ingredients into a seperate bowl, twice.
Combine your water, coffee and oil in a jug.
Add the dry ingredients with the water & oil mix to the egg mix and fold in.
Add the vanilla and stir in.
Pour into your two pans and bake for 20-25 minutes until cooked.
Cool for 10 minutes and then turn over onto a wire rack to cool completely.
Icing
Ingredients
500g Icing sugar
80g Unsalted butter, softened
1 teaspoon Vanilla extract
4 tablespoons Cocoa
2-3 tablespoons Milk
Method
Add the butter and icing sugar, vanilla and cocoa to a mixing bowl, and whisk till smooth, add milk if needed, but not too much as you want a smooth icing that's not runny.
