Date balls are a popular snack because they are easy to make, require no baking, and can be customized with a variety of ingredients to suit individual tastes and dietary preferences.

Ingredients
250g Pitted dates
125g Unsalted butter
1/2 cup Brown sugar
150g Marie biscuits, finely crushed
2 teaspoons Vanilla extract
3 cups Rice Krispies
2 cups Desiccated coconut
Method
Chop the dates into small pieces.
In a saucepan, melt the butter and sugar together, stirring till the butter is melted.
Turn the heat to low and add the chopped dates, cook until the mixture is boiling, it will take about 20 minutes. Stir often to make sure the mixture doesn't burn. Take off the heat.
In a large bowl, add the Marie biscuits, Rice Krispies, vanilla and date mixture and stir till combined. Let it cool slightly.
Shape into bite-size balls and roll in the desiccated coconut.
Store in an airtight container.
