Ingredients
3 tablespoons Oil
500g Beef mince - can also use half beef half pork mince
1 onion, finely chopped
1 teaspoon Crushed garlic
2 Potatoes, peeled and cut into cubes
1 punnet Mushroom, sliced
1 Carrot, diced
1/2 cup Frozen peas
1/4 cup Frozen corn
2 tablespoons Tomato paste
2 tablespoons chopped parsley
1 teaspoon salt
1/2 teaspoon ground pepper
1 Beef stock cube - dissolved in 250ml boiling water
Method
Heat the oil in a pan and fry the onions till soft, add the garlic and fry for a minute.
Add the mushrooms and sauté until golden.
Add the mince and tomato paste and fry till light brown.
Add the vegetables, potatoes, salt, pepper, and beef stock.
Let this simmer for 20-30 minutes till fragrant then stir the parsley through.
